中文摘要：	近年来，随着人们消费习惯的转变和生活水平的提高，健康营养的生鲜食品广受大众欢迎。生鲜食品的保存期限较短，易受自然环境的影响，生产储存运输需要特殊的条件，进而易腐烂变质的生鲜食品安全问题也广受关注。生鲜食品安全事件的出现，不仅会危害消费者的身心健康，也会让消费者失去对该生产企业品牌的信任，影响企业的生存发展。本文结合我国生鲜食品行业情况，通过梳理论述相关文献提出研究问题，确定研究对象和研究方法，界定了资产专用性、供应链整合、质量管理行为、生鲜食品安全绩效四个潜在变量，根据国内外学者研究的理论基础，作出研究假设，构建结构方程模型。本文采用问卷调查法收集样本数据，并用SPSS和Amos软件对样本数据进行描述性分析、信度和效度检验，并验证结构方程模型的适配情况。运行结果显示，数据信度与效度良好，测量模型适配度较高，5个研究假设均得到支持。最后，得出研究结论并给出相应的对策和建议。本文以生鲜食品加工企业为研究对象，运用结构方程模型的方法，实证分析资产专用性、供应链整合、质量管理、食品安全绩效之间的关系。研究发现，资产专用性对供应链整合和质量管理行为都有显著的直接正向影响，并通过供应链整合和质量管理行为这两个中介变量对生鲜食品安全绩效有显著的间接影响。在所发生的食品安全事件中，加工过程中的生鲜食品安全事件占较大比重，主要原因是生鲜食品加工企业经营分散，软硬件设施投资不足。因此，食品供应链中的生鲜食品加工企业应该投入较多专用性资产，建立冷链物流系统和可追溯系统，加强与供应链中其他企业信任与合作，提高供应链整合水平，降低生鲜食品安全问题的发生率。
英文摘要：	In recent years,with the change of people's consumption habits and the improvement of the living standard, the healthy fresh food is popular with the public.The preservation period of fresh food is short, easy to be affected by the natural environment.Its production,storage and transportation requires special conditions.So safety issues of fresh food are also widely concerned. Fresh food safety incidents, not only will harm the physical and mental health of consumers, but also make consumers lose the trust of the production enterprises. As a result, the survival and development of enterprises will be affected. In this paper, through combing the relevant literature and the situation of fresh food industry in China,I put forward the research questions, determine the research object and research methods.Four potential variables are defined,which are asset specificity, supply chain integration,quality management behavior and fresh food safety performance.Based on the domestic and foreign theoretical basis,the research hypotheses are made and the structural equation model is constructed.In this paper, a questionnaire survey was used to collect sample data. SPSS and Amos software were used to analyze the sample data,the reliability and validity were tested, and the adaptation of structural equation model was verified.The running results show that the reliability and validity of the data are good, the measurable model fit is high, and the five hypotheses are supported.Finally,I draw the conclusion and give the measure and the suggestion. This paper,taking fresh food processing enterprises as an example,using the method of structural equation model,analyzes the relationship between asset specificity,supply chain integration, quality management,food safety performance.We can find that asset specificity has significant direct positive effect on supply chain integration and quality management behavior,and through the two intermediary variable asset specificity has significant indirect influence on fresh food safety performance.In the food supply chain,fresh food processing enterprises should invest more specific assets,establish the cold chain logistics system and traceable system, strengthen the trust and cooperation with other supply chain enterprises,enhance the integration of supply chain level, reduce the rate of fresh food safety problems.
