中文摘要:进入新世纪以来,我国葡萄酒需求量、投资和企业进入速度加快,葡萄酒行业从种植、生产和销售正在进行行业重组,国外葡萄酒品牌及进口葡萄酒快速增长,葡萄酒行业的企业竞争日益加剧。在此情况下,我国葡萄酒企业如何强化企业在技术创新中的主体地位,增强新产品开发能力,提高产品技术含量和附加值,加快产品升级换代,是摆在葡萄酒企业面前的主要任务。本文以王朝公司为研究对象,分析了王朝公司的发展历史,探讨了王朝公司在葡萄酒技术和设备研发方面所形成的从的特点,并以王朝公司葡萄酒防氧化设备研制为例进行了验证。在葡萄酒防氧化设备研发方面,主要探讨通过实验验证氮气在葡萄酒储存期防氧化的作用,并明确利用氮气开发葡萄酒防氧化设备研制原则,分析利用氮气开发葡萄酒防氧化设备研制的过程及其效果。本文的主要研究结论为:1.在我国葡萄酒行业企业通过引进外国的技术和设备,使我国葡萄酒酿造工艺达到国际水平的情况下,企业自有加大投入,通过自主研发,才能使我国葡萄酒生产技术、设备和工艺流程达到世界领先水平。2.国内葡萄酒企业要想在竞争中处于主导地位,就必须进行自主研发,使自己的技术和设备处于国际领先水平。3.在我国葡萄酒需求增长迅速,消费者对食品安全更加关注的背景下,葡萄酒企业只有进行技术和设备的自主研发,才能满足消费者的要求。 
英文摘要:Entering the new century, China's wine demand, investment and development of enterprise into the stage of high speed road, the wine industry is restructuring in cultivation, production and marketing .With more and more foreign wine brands coming into China and the rapid growth of imported wines, the wine industry becoming the increasingly competitive business. In this case , China's wine industry on how to strengthen the dominant position of enterprises in technological innovation , enhance the ability to develop new products , improve product technology level and added value and accelerate product upgrading , is the main task of the wine enterprise. In this article, we analyzed the Dynasty history and the characteristics of wine making and facilities, and as an example with research and development of Dynasty wine oxidation facilities for verification according to focus on Dynasty company. In the research and development of wine oxidation facilities, mainly experimentally invest the function of nitrogen in wine storage, while analyze the effects and development of wine with nitrogen oxidation facilities according to oxidation principle. The main conclusions of this article: 1. In order to make our wine production technology and facilities reach the world advanced level, we should increase investment and improve the ability of independent research and development. 2. In the market competition, domestic wine companies should enhance the independent research to reach the dominant position. 3. With the background of rapid wine demand growing and the consumer paying more attention to food safety, wine companies should improve the technology and facilities to meet the demands of consumers.
