中文摘要:20世纪90年代以来,伴随着饭店企业数量的剧增,饭店业已逐步进入利润平均化阶段,同时由于市场不景气、经营不善等方面的原因,盲目建设的恶果开始凸现,大量资产闲置,经营成本相对提高,饭店业的总体经济效益较差,利润率逐步下降。虽然饭店经营者采取了不少改进措施,客房出租率开始有所回升,但由于行业内部的竞争日益加剧,平均房价下降,导致全行业的利润没有达到同步增长。饭店企业逐渐意识到增加营业额已经变得越来越不容易,而管理好饭店的采购活动是利润增长的关键点。由于饭店餐饮企业采购具有品种多、数量多、流程泄漏点多等特点,已经越来越成为饭店管理者进行管理的重点。 价值链理论是从企业经营活动的角度分析,将饭店餐饮的经营活动分解为若干个与价值有关的作业,企业通过完成一系列的作业而产生价值。通过对饭店餐饮价值链的分析可以得知采购是在餐饮活动形成的链条中很重要的一环,所以采购管理是否得当、有效将直接影响餐饮利润。 本文主要研究如何利用价值链理论和成本理论对饭在店餐饮采购进行管理。首先,文章对选题的背景和饭店餐饮采购管理的现状进行了简要概述,在此基础上阐述了本研究的意义。其次,对研究中运用的价值链理论和成本理论进行了综述和回顾,论述了饭店餐饮企业采购管理的要点与现实问题,对采购管理的主要内容进行了详细的分析,在此基础上提出了我国饭店采购管理存在的主要问题。其后,研究了饭店餐饮企业的采购活动及其流程管理,主要包括采购的内外部活动和内外部流程的管理。最后,在前篇的研究基础上提出了优化饭店采购成本管理的对策,使采购活动能确保饭店餐饮的产品质量与经营利润。 
英文摘要:Along with the rapid increase in the number of hotel business, the hotel industry gets into a stage of average profit, since the 1990s. At the same time as the market slump, poor management, and other reasons, blind construction has begun to highlight the consequences, for example, a large number of idle assets, operating costs relative to these countries, the hotel industry overall poor economic efficiency, profit margins decline. Since then, although the hotel operators to take a number of measures, the room occupancy rate has begun to rebound, but the industry as a result of increased competition, the average house price decline, the industry's profit growth did not meet simultaneously. Hotel business increase gradually aware of the turnover has become more and more difficult, only to manage purchasing in order to increase profits. As the purchasing of hotel and restaurant with a big change, a major point of leakage and cost more features, has become more and more hotel managers focus on cost management. Theory of the value chain from the perspective of business activities, hotels catering to business activities divided into a number of operations and the value of the enterprise by completing a series of operations arising from the value of each operation will have an impact on food costs. The hotel catering value chain analysis that the cost of purchasing in the form of chain link is very important and the quality of the purchasing cost management will directly affect the cost of food. Based on the value chain theory, I research and analysis of the cost of purchasing the hotel restaurant management. First of all, I summarized and reviewed the value chain theory and the theory of the cost used in the disquisition. Then, in a comprehensive understanding of hotel services on the basis of the characteristics of products, catering to the hotel purchasing and the importance of the significance of the exposition. The following is the important content and current problem of purchasing cost management in Food and beverage. Finally, discussed the optimization of hotel purchasing cost management measures, expound the external and internal response of the hotel's purchasing activities.
