中文摘要:随着旅游业的发展,单一的观光游览已经远远不能够满足旅游者的需求,旅游者希望在观赏自然景观和人文景观的同时,能在文化上进行交流和沟通,文化旅游正是为了迎合旅游者的这一需求而蓬勃发展起来的。中国饮食文化博大精深,文化旅游的发展给饮食文化提供了一个舞台。而且,与其他文化相比,饮食文化更能普遍引起人们的兴趣,并易为人们理解和接受。因此,饮食文化与旅游相结合,不仅能够丰富旅游活动的内容、增加旅游经济效益,还能在旅游业的发展中使饮食文化自身得到不断发展和繁荣。目前饮食文化资源旅游开发的形式主要是以各地风味美食为吸引物的佳肴品尝游,但是随着旅游者需求层次的提高,旅游者不再仅仅满足于对色、香、味俱全的美食的需求,而且希望得到精神上的满足。这就需要饮食文化资源旅游开发者深入挖掘饮食的文化内涵,开发集观赏性、享受性和参与性为一体的饮食文化旅游产品。 本文从文化人类学的观点出发,认为饮食文化主要由三个层面的要素组成:物质文化要素、行为文化要素和精神文化要素。通过对饮食文化的要素进行分析,不仅能够对饮食文化的内涵有更完整、更准确的把握,还能给饮食文化资源的旅游开发提供一定的指导意义,即在开发过程中要同时重视这三个方面的要素,而不能顾此失彼。通过对饮食文化的内涵和饮食文化资源旅游开发的可行性的分析,本文认为饮食文化在我国旅游业中具有很大的开发潜力。随后,本文提出了饮食文化资源旅游开发的基本程序、开发模式和饮食文化旅游产品的体系,这是本文的重点之一,也是本文的创新之处,希望能对饮食文化资源旅游开发的理论和实践有所帮助。最后,本文对山西省饮食文化资源的旅游开发进行了研究,通过对山西省饮食文化资源的特色评价和目前山西省饮食文化资源旅游开发的现状分析,提出了相应的开发对策,并且提出了山西省饮食文化资源旅游开发的构想。  
英文摘要:With the development of tourism, only sightseeing tour can no longer meet the demand of tourists. They hope to communicate in cultural terms while viewing natural sceneries and human landscapes. To cater to people’s demand, the culture tourism flourishes. The culture tourism provides a stage for Chinese splendid dietary culture. And, compared with other culture, dietary culture can easily arouses people’s interest and be more easily accepted and understood. So the integration of diet and tourism can not only enrich tourism activity, but also increase economic revenue. Simultaneously the dietary culture itself can become more prosperous. At present, the dominant form of the dietary culture tourism is tasting gourmet tour. With the change of demand, tourists want something more spiritual, not just good-tasted. So the connotation of the dietary culture should be analyzed and studied. And thus the products of dietary culture tourism which contain enjoyment, appreciation and participation should also be developed. Based on the viewpoint of cultural anthropology, dietary culture is made up of elements on three levels which are material culture, behavioral culture and spiritual culture. By analyzing the elements of dietary culture, we can understand the connotation of the dietary culture well. Moreover we can obtain some instructions on the exploitation of dietary culture resource in tourism industry, that is, these three elements should be given equal recognition in the exploiting process. Through the analysis of the connotation of dietary culture and the possibility of exploiting dietary culture resource, this paper discusses that the development of dietary culture resource has a great potential in the tourism industry. Then it focuses on the basic procedure, exploiting models of the development of dietary culture resource and dietary culture product system which is one of the important and innovative issues. At last, the exploitation of dietary culture resource in Shanxi Province is studied. In this part, the author analyzes the features and exploiting status of the dietary culture in Shanxi, offers the corresponding methods, and brings forward some ideas for the development of dietary culture resource in tourism industry.
