中文摘要: 当前我国已加速进入老龄社会,人口老龄化已成为亟需积极应对与规划的社会及经济发展重要课题,社区养老势必会作为我国居民养老的主要解决方案,最符合中国国情。在社区养老各项服务保障中,民以食为天,社区餐饮成为社区养老整体方案中的重要且不可缺少的一环。目前已有的社区老年食堂往往“叫好不叫座”,面对竞争激烈的传统餐饮市场,仅依靠餐饮主业态维持经营,难以达成经济实惠的低毛利目标与经营效益的平衡,更多依赖于政府补贴勉强维持。 E-Food集团作为国内一家大型的在途餐饮配餐集团,计划以内部创新项目孵化的形式开展社区养老配餐业务,整合集团旗下中央厨房的餐饮生产能力,结合国内城市养老新形势下的社区餐饮发展趋势,大力发展社区餐饮品牌连锁店,探索传统团餐业务的转型。 本篇论文首先以该创新转型项目为实际案例,深入研究目前我国社区养老餐饮行业的政治政策、经济、社会文化、技术等宏观环境,对该项目所选择的转型方向进行宏观可行性分析,论证项目的实施基础。进而对于E-Food集团及项目的内部环境、企业优劣势、风险与机会进行态势分析,通过对比各态势组合的适应性发展策略,分析得出最适合该项目的差异化战略方向。 本篇论文的创新之处是对项目的差异化战略提出了创新的经营思路与商业模式。一方面结合传统餐饮行业在食品化、标准化、数字化、营养化等餐饮业新趋势、新技术,创新提出了数字化膳食营养计划的商业模式。另一方面,结合移动互联网在生活中的普及,线上线下商业模式的结合,将社区私域流量运营的商业风口与社区餐饮业态有机结合。以上两类创新经营模式在E-Food集团内部资源的整合协同下,可以有效实施,并为该集团在社区养老餐饮领域的转型中带来核心竞争力。同时,可为国内连锁餐饮行业对于社区餐饮的开拓,以及各级政府对于社区养老餐饮政策的制定和调整提供参考和借鉴。 
英文摘要: At present, China has accelerated entry into the aging society, and the aging of population has become an important issue of social and economic development that needs to be actively addressed and planned. Community elderly care is bound to be the main solution for residents' elderly care in China, which is most in line with China's national conditions. Community catering is an important and indispensable part of the overall plan for community elderly care. Currently, the existing community elderly cafeterias are difficult to achieve a balance between affordable low gross profit goals and operating efficiency, and rely more on government subsidies to barely maintain. As a large travel catering group in China, E-Food Group plans to carry out community elderly catering business through internal innovation project, integrate the catering production capacity of the group's central kitchens, and combine with the development trend of community catering under the new situation of elderly care in China, develop the community chain restaurants, and explore the transformation of traditional group catering business. This paper takes the innovative transformation project as a practical case to conduct a thorough study of the political policy, economy, social culture, technology and other macro environment of the community elderly care catering industry in China. It conducts a macro feasibility analysis of the transformation direction chosen by the project and demonstrates the implementation basis of the project. Furthermore, a situational analysis is conducted on the internal environment, strengths and weaknesses, threats, and opportunities of E-Food Group and the project. By comparing the adaptive development strategies of each situational combination, the most suitable differentiated strategic direction for the project is identified. The innovation of this paper is to propose innovative business ideas and business models for the differentiation strategy of the project. On the one hand, based on the new trends and technologies of traditional catering industry in food, standardization, digitization, and nutrition, a business model of digital dietary nutrition plan has been innovatively proposed. On the other hand, combined with the popularization of mobile internet in daily life and the combination of online and offline business models, the commercial atmosphere of community private domain traffic operation is organically combined with the community catering industry. The above two innovative business models can be effectively implemented through the integration and coordination of internal resources within the E-Food Group, and bring core competitiveness to the group's transformation in the field of community elderly care catering. At the same time, it can provide reference and reference for the development of community catering in the domestic chain catering industry, as well as for the formulation and adjustment of community elderly care catering policies by governments.
