中文摘要：	随着国民经济的发展，人民生活水平的提高，消费者对于食品质量越来越关注。新产品研发项目质量管理是产品全生命周期质量管理的最初阶段，提高新产品研发项目质量管理水平对食品企业提升核心竞争力，提高食品质量及获得消费者信赖是至关重要的。N公司是一家研发、生产和销售巧克力、硬质糖果及冰淇淋产品的企业，为了满足消费者日益高涨的质量追求及增强市场竞争力，其对自身新产品研发项目质量管理的改进有着迫切的需求。本文将以N公司巧克力新产品研发项目为研究对象，对其质量管理问题进行分析并提出改进策略。 本文介绍了N公司巧克力新产品研发项目现状，采用问卷调查方式并结合历史数据及资料，识别了5个巧克力新产品研发项目质量管理的问题。利用质量管理工具分析问题的根本原因，并基于PMBOK项目质量管理三个过程对根本原因分类归纳。本文以PMBOK项目质量管理为理论依据，从质量策划、质量保证、质量控制三个方面对巧克力新产品研发项目质量管理提出改进策略，以解决其质量管理存在的问题：首先，在巧克力新产品研发项目质量策划方面，从项目质量目标、组织结构和研发项目中质量要求三个方面提出了相应改进策略；其次，在巧克力新产品研发项目质量保证方面，针对项目流程及培训质量提出了改进策略；最后，在巧克力新产品研发项目质量控制方面，对影响项目质量及可能影响食品安全管理体系的变更和质量风险两个重点控制过程进行改进，并为确保各项策略有效实施，制定了对应的实施保障措施。 本文综合运用了项目质量管理理论和工具，对N公司巧克力新产品研发项目质量管理识别了问题，提出了改进策略和实施保障，有助于提高其质量管理水平，并对业内同行的新产品研发项目质量管理具有一定的借鉴作用。
英文摘要：	Nowadays, the food quality is gradually being paid attention by consumers with the development of national economy and the improvement on people's living standard. Quality management of R&D project is the initial stage of quality management of product’s life cycle. Improving the quality management level of R&D project is very important for food enterprises to enhance their core competitiveness, improve product quality and obtain consumers’ trust. N company is an enterprise that research and develops, produces and sells chocolate, hard candy and ice cream. In order to meet the consumers’ increasingly demanding on product quality and enhance the market competitiveness, N company has an urgent need to improve the quality management of its new product R&D project. This thesis takes new chocolate R&D project in N company as the research objective, puts forward improvement strategies in the basis of the analysis of the quality management problems at new chocolate product R&D project. This thesis introduces the current situation of new chocolate product R&D project in N company. Five quality management problems of new chocolate product R&D project were found out by questionnaire and historical data. The root causes of the five main problems are analyzed by quality management tools, and summarized classified on the basis of three processes of project quality management in PMBOK. Based on the theory of PMBOK project quality management, this thesis puts forward the improvement strategies for the quality management of new chocolate product R&D project of N company from quality planning, quality assurance and quality control, so as to solve the existing problems in its quality management: firstly, the improvement strategies are put forward from three aspects: quality objectives, organizational structure and quality requirements in the R&D project for the quality planning of its new chocolate product R&D project; secondly, the improvement strategies are puts forward for the project quality assurance of its new chocolate products to improve the quality of project process management and training management; finally, the thesis puts forward the improvement strategies for the project quality control of its new chocolate product R&D project. Improves two key control processes, change management and quality risk management, which may affect the project quality and food safety management system. And the corresponding implementation safeguard measures are put forward to ensure the effective implementation of the strategies. Based on the theory and tools of project quality management, this thesis identifies the problems of quality management of new chocolate product R&D project in N company, puts forward the improvement strategies and implementation safeguard measures, that improves its quality management level. And this thesis can be used for a reference for the new product R&D project in peer enterprises.
