| 中文摘要: | 餐饮行业市场巨大、并处于快速增长趋势,随着人们生活水平的不断提高,人们对餐饮的需求也在不断升级演变中:从“吃饱”到“吃好”再到“吃文化、吃安全、吃体验、吃颜值等等”;在顾客需求不断变化的大背景下,很多餐饮企业不能适应顾客需求变化的大环境,又没有自身的竞争优势,导致出现大量企业倒闭现象。以青岛三笑餐饮管理有限责任公司(下文称:三笑餐饮公司)在行业中风雨飘摇,面对多重困难挑战,为了企业能在这样的环境中生存并发展壮大下去,就需要公司重新梳理自身情况,分析市场竞争环境、客户需求定位,确定战略、设计商业模式、制定商业计划。 因此本文采用文献研究法、案例研究法、经验总结法、定性分析法、观察法等研究方法;以PEST模型、五力分析和SWOT分析方法作为市场和企业的分析工具;以《商业模式新生代》的商业模式画布为商业模式研究工具,制定案例公司的商业模式。 本文的研究主要分为以下几个部分:一、分析餐饮行业现状及发展趋势,其中包括市场规模、企业生命周期、跨界对餐饮行业的影响、外卖的崛起、单点爆发、行业潜力、未来投融资方向和混搭变化促使餐饮成为综合运营体。二、品类细分升级和消费者特点、餐饮企业转型升级的壁垒等;三、环境背景分析,PEST模型分析了解餐饮行业的政治环境、经济与人口环境、社会与文化环境以及技术自然环境对企业未来发展的影响;通过五力分析了解现有竞争对手、新进入的挑战者、替代产品和服务、以及供应链上的厂商威胁和各利益相关者;利用SWOT分析来确定案例公司的优势劣势、机会和威胁;通过市场细分、目标市场和市场定位完成商业模式设计等。 通过上述分析和梳理,最终为案例公司量身设计了商业模式、并通过财务及货币展示了商业模式的价值, 通过商业模式实施,实现企业系统化管理,科学化管理,从而保障商业计划的落地和目标的达成,最后对整个商业计划进行评估和提出融资需求。 | |
| 英文摘要: | The market of catering industry is huge and in a rapid growth trend. With the continuous improvement of people's living standards, people's demand for catering is also constantly upgrading and evolving: from "full" to "good" to "eating culture, eating safety, eating experience, eating beauty and so on"; in the context of changing customer demand, many catering enterprises cannot adapt to the changing customer demand Environment, without its own competitive advantage, leads to a large number of business failures. The case company (Qingdao Sanxiao Catering Management Co., Ltd.) is in a turbulent situation in the industry, facing multiple difficulties and challenges. In order to survive and grow in such an environment, it is necessary for the company to reorganize its own situation, analyze the market competition environment, customer demand positioning, determine strategy, design business model and formulate business plan. Therefore, this paper adopts literature research, case study, experience summary, qualitative analysis, observation and other research methods; PEST model and SWOT analysis methods and models are used as analysis tools of market and enterprise; nine new generation modules of business model are used as templates to design the business model of case company and finally complete the formulation of business plan. The research of this paper is mainly divided into the following parts: first, analyze the current situation and development trend of the catering industry, including market scale, enterprise life cycle, cross-border impact on the catering industry, the rise of takeout, single point outbreak, industry potential, future investment and financing direction and mix and match changes to make catering become a comprehensive operation. II. Category segmentation and upgrading, consumer characteristics, barriers to transformation and upgrading of catering enterprises, etc.; III. environmental background analysis, PEST model analysis to understand the impact of the political environment, economic and demographic environment, social and cultural environment, and technological and natural environment of the catering industry on the future development of the enterprise; through five force analysis to understand the existing competitors, new challengers, alternative products and Service, as well as the threat of manufacturers and various stakeholders in the supply chain; use SWOT analysis to determine the strengths, weaknesses, opportunities and threats of the case company; complete the business model design through market segmentation, target market and market positioning. Through the above analysis and carding, we finally designed a business model for the case company and demonstrated the value of the model through currency, Through the different periods of the enterprise life cycle, gradually achieve the business plan objectives, through the systematic and scientific management of the management system to ensure the landing of the business plan, and finally evaluate the whole business plan and put forward the financing needs. | |
