中文摘要:摘要 餐饮业在国民经济中具有重要的地位,是第三产业中的主要组成部分。种植业、养殖业都是餐饮业中的连锁的上游相关产业。此外,餐饮业还具有解决就业、扩大消费、繁荣经济的重要作用。近些年来,中国的餐饮业发展迅速,到2018年,已经突破了4万亿元大关,整体规模已经非常庞大,整体行业也随着消费升级不断变化。但是,中国还缺少在世界范围内有规模、有影响力的餐饮企业,特别是缺少国际性的大型连锁餐饮企业。根本原因还在于经营战略和管理的滞后。因此,对于现阶段餐饮企业的经营战略的研究就具有一定的现实意义。 通过对经营战略和餐饮企业的文献研究,制定了研究方法。然后界定了相关概念,对支撑论文的理论基础:战略理论、价值链理论、创新理论进行了简要的说明。接着对我国餐饮业的现状以及连锁餐饮企业的问题进行了分析。作为核心章节,第四章提出了经营战略的内涵,阐述了其必要性,并提出了三种创新路径。最后,以海底捞为例,对其现状进行了经营战略分析,并总结了其创新的方面和不足的地方。 在分析和总结的基础上,笔者提出了三种连锁餐饮企业经营战略的创新路径,即:基于价值系统的价值主张创新,基于外部价值链的伙伴界面创新,基于内部价值链的运营规则创新。 关键词:连锁餐饮;经营战略;创新路径  
英文摘要:Abstract The catering industry has an important position in the national economy and is the main component of the tertiary industry. Planting and aquaculture are all upstream related industries in the chain of catering industry. Not only that, but catering industry has an important role in solving employment, expanding consumption, and prosperous economy. In recent years, the Chinese catering industry has developed rapidly. By 2018, it has exceeded the 4 trillion yuan mark. The overall scale has been very large, and the entire industry has also changed with the escalation of consumption. But there is also a shortage of large-scale and influential catering companies around the world, especially large international chains. The root cause is also the lag in business strategy and management. Therefore, the research on the management strategy of catering enterprises at present has a certain practical significance. Through the study of the management strategy and the literature of the catering enterprises, the research methods are formulated. Then the relevant concepts are defined, and the theoretical basis for supporting the thesis: strategic theory, value chain theory, and innovation theory are briefly explained. Then the present situation of Chinese catering industry and the problems of chain catering enterprises are analyzed. As the core chapter, the fourth chapter puts forward the connotation of the business strategy, expounds its necessity, and proposes three innovative paths. Finally, taking Hai Di Lao enterprise as an example, this paper analyzes its present situation and summarizes its innovation aspects and deficiencies. On the basis of the analysis and summary, the author puts forward three innovation paths of the management strategy of chain catering enterprises, namely: value system based value proposition innovation, partner interface innovation based on external value chain, and operation rule innovation based on internal value chain.
